Do you love to cook? I do! It’s my favorite thing to do, so much so that I even love shopping for ingredients at the grocery store!

As much as I love and appreciate fine dining and cooking fancy recipes; my husband, Andrew, and I have recently agreed that our goals for the near future require a tighter budget for us, Reesee the Cat, and the guinea pigs, Hillary Swank and Elizabeth Olsen.

Every week at meal planning time, I spend a lot of time looking for recipe ideas that will feed us well and let us save more. It’s overwhelming.

Yesterday after our trip to Aldi, I roasted the whole chicken we bought, pulled all the meat off and then roasted off the bones to make stock in the instant pot. We’ll get 8 veggie forward meals plus stock from the one chicken, along with some other meals as well.

While the smell of that stock was wafting through the apartment, I thought to myself, “if budget cooking is the content I’m looking for, why shouldn’t I just produce it myself and share it?”

Thus, How to Stretch a Chicken was born. This blog is a chronicling of recipes (not just chicken dishes!) and suggestions for saving on groceries. It’s a new journey for me, and I’m glad to have you along!
