Potato, Potahto… Yum Either Way!

Between the two of us, we can stretch a 5lb bag of potatoes over a couple of weeks. One potato makes enough mash for both of us as an accompaniment to some chicken and roasted broccoli, or sautéed veggies with a great sauce. We make them creamy with a little bit of butter, some cream and a bit of cream cheese. We season them with salt and pepper, and I like to top mine with chopped scallions and fresh parsley.

One of our favorite potato-based meals is potato tacos: a baked potato stuffed with seasoned taco meat (we use ground turkey seasoned with salt, pepper, guajillo and ancho chili powders, cumin, and coriander. I just eyeball the amounts). Add a green salad on the side for some color and texture variety and you have a great, easy meal.

Another is broccoli cheese baked potatoes with turkey bacon or chicken sausage in a homemade cheese sauce. Yum! And of course let us not forget the classic loaded baked potato. We like to have baked potatoes, however topped, with a sweet kale bagged salad we get at Aldi.

Finally, especially if you have red potatoes though russets will do, I love to prepare a potato side that I remember enjoying in Brazil when my family lived there: dill roasted potatoes. I chop up a bunch of fresh dill and some parsley, and toss potatoes cut into cubes with the herbs, olive oil, pepper and coarse salt together in a bag (shake shake shake!!) and then roast in a 450 degree pre headed oven for about 35-40 minutes, until fork tender.

There are so many things you can do with the humble potato. The imagination knows no bounds! Our next adventure is going to be loaded potato skins in the air fryer.
