My friend has a term “easy button meals” for when they do a meal that’s very easy or very quick to prepare.
Besides Peanut Butter Panda Puffs with almond milk, one of our favorite easy button meals is roasted veggies over a grain (we have used quinoa, farro, and brown rice; freekeh would be delicious as well).
When I work these into the meal plan, I make sure we have cabbage, sweet and russet or red potatoes and corn on hand. But if we need a quick meal, I will just grab whatever veggies we have on hand, give them a coating of olive oil and my favorite seasoning blend: onion powder, garlic powder, salt, pepper, and smoked paprika, then roast them in the Foodi Ninja Grill (available here: https://m.ninjakitchen.com/exclusive-offer/AG301B1NP/ninja-foodi-5-in-1-indoor-grill-with-4-quart-air-fryer/)
We pile all the veggie goodness onto our grain base then top with a sauce (yum yum sauce or a vinaigrette are our go-tos). Tonight we went with a raspberry and pink peppercorn dressing I found at Whole Foods.
